
I can’t explain it…
But there’s something really satisfying when your homegrown lettuce and mint support your lunch efforts.
Picking it this morning, I thought: Healthy eating shouldn’t feel hard. It should feel simple and satisfying.
Especially when you LOVE food like I do.
I love meals out. I love brunch. I love a flat white and carrot cake. I love cosy nights in with a takeaway. And I love crisps and dip.
So believe me, I know how hard eating better can feel.
That’s why I’m sharing a simple tip today that helps me eat healthier:
Find 2 to 5 healthy and enjoyable lunch options to rotate.
4 Simple Yet Healthy Lunch Options
Here’s mine:
OPTION 1
Salads full of lettuce, spinach, tomatoes and cucumber. Plus a combination of:
- Protein: hard-boiled eggs, chicken, ham, tuna, tinned beans, cottage cheese
- Fruit: apple, pear, grapes, blueberries
- Grains: quinoa, bulgur wheat, wholewheat pasta
- Extras: beetroot, peppers, olives, pickled onions, seeds, feta
The end result? All depends on my creativity and what’s in our fridge!
OPTION 2
Wholemeal sandwiches filled with similar ingredients to our salads. Plus cherry tomatoes on the side. Bread-wise, Hovis Tasty Wholemeal Loaf is one of the best in the supermarkets (contains fewer unnecessary and unhelpful ingredients).
OPTION 3
Soup and sourdough. Soup-wise, we keep Aldi’s “Soupreme” cartons in the fridge for days you need something quick and easy. The ingredients are what you’d use to make your own — which I tell myself I will one day!
OPTION 4
Peanut butter and sliced banana on toast. Or avocado with a sprinkle of salt and chilli flakes.
LOOK & FEEL BETTER
Eat more fruit, veg, whole grains and unprocessed protein for lunch most days — and it’ll positively impact ALL OF YOU. Your mind. Your body. Your emotions.
In fact, research shows the more fruit and veg you eat, the happier, calmer and more energetic you feel. With one study suggesting that 7 portions of fruit and veg a day can reduce low moods by up to 62%.
Put another way, when you eat healthier, you don’t just look better — you feel better. And who doesn’t want that?
So, take a few minutes now to choose 2 to 5 healthy and enjoyable lunch options to rotate. Then next time you go to Aldi, stock up and get started.
You don’t need to wait until Monday either. Over the years, I’ve trained myself to start any day of the week. And so can you.
